We have a close vote for the first time ever. 56% of the vote is in favor for fossils over vultures. So naturally, it looks like I’ll just write them both — I actually wanted to anyways. Brachiopods and the Devonian Period are coming up next.

APPLEJACK

Most, if not all, of the apples have now been picked or fallen to the ground to become fodder for deer and various Catskill critters. But that doesn’t mean the season is over. From fresh baked apple pies to seasonal farmers' markets, the scent of Malus domestica looms large in our homes and beyond.

There are ways to personally prolong the apple season. As autumn bursts, we tend to turn to darker spirits. If you're like me, you stick to classic cocktails to enjoy them best. So, I have a little secret that will plus up a go-to classic: the Applejack Manhattan.

If you’re a fan of brandy, you already know that simply swapping bourbon or rye for any type of brandy, armagnac, or cognac offers up a round and earthy alternative to this indelible drink. Lucky for us, New York state has a rich history of apple brandy production, dating back to the 18th and 19th centuries. Today, it boasts an array of modern spirits producers, making this seasonal twist on the Manhattan a perfect way to capture the essence of the harvest. Here’s a recipe to make at home. The Applejack Manhattan

Ingredients
> 2 oz. Apple Brandy (aged brandy highly recommended)
> 1 oz. Sweet Vermouth
> 1-2 dashes Angostura Bitters
> Garnish: Brandied Cherry or Skewered Apple Slice

Instructions
> Fill a mixing glass with ice
> Add ingredients
> Stir until well-chilled
> Strain into a chilled coupe glass or over large ice cube in a rocks glass
> Add garnish and enjoy
