A recipe has been revealed, weekly happenings, fly fishing updates, and catskill-opoly

After some not-so-great weather, we seem to be back on track. The garden’s popping off and the bugs are hatching on the river - mostly caddis, march browns, and sulphurs. Tomorrow I’ll be on a drift boat from dusk till dawn, hoping to find some trout and spot some Drakes (an exceptionally large mayfly). The pack’s filled with sandwiches, cold beer, and as tradition demands, one chocolate chip cookie — it’s part good luck charm, part coping mechanism for when the fish aren’t biting. This edition is overflowing and I pulled together some great stuff for your weekend to help get you into the great outdoors. Have fun out there! - Michael

A RECIPE

Rhubarb is one of the first edible plants to show up in spring, often appearing while the ground is still gripped by the cold, and signaling that the growing season has finally begun.

As a perennial that thrives in cooler climates, it’ll keep coming back year after year, making it ideal for the Catskills and self-proclaimed amateur green thumbs like myself. Just give it full sun, well-drained soil, and a bit of space and you should have a consistent rhubarb supply for a decade or more.

When the time comes to harvest, cut the outer stalks that are firm and crisp near the base, leaving the center ones so the plant can keep producing. These stalks are the part you want — the leaves, on the other hand, are toxic, containing high levels of oxalic acid, a compound that can cause nausea or worse in larger amounts.

OK, so now you are sitting there with more rhubarb than you know what to do with — don’t worry, I got you covered. I stole a Crew Member’s Catskill-famous strawberry basil rhubarb crisp recipe. Take it. Print it. Hide it under your mattress. Keep it secret, keep it safe.

STRAWBERRY BASIL RHUBARB CRISP

Ingredients:
- 2 pints strawberries, quartered
- 1 cup rhubarb (~3 stalks chopped)
- 1/2 cup brown sugar
- 1 tbsp corn starch
- Juice and zest of 1 lemon
- Dash of salt
- 1/4 cup chopped basil

For the crisp topping:
- 1 cup rolled oats
- 1/4 cup brown sugar
- 1/2 stick butter, room temperature, cut into small pieces

Preheat your oven to 375 degrees and prepare the fruit. Rinse and quarter the strawberries. Chop the woody ends off the rhubarb stalks and chop roughly into 1/2 inch pieces. Mix fruit in a medium bowl with brown sugar, salt, cornstarch, basil, and the lemon zest juice. Let sit to macerate while you prepare the crisp topping. 

For the topping, mix the oats and brown sugar in a small bowl. Add a pinch of salt, then mix in the butter with your hands, rubbing it into the oats and brown sugar mixture. 

Pour the fruit into a small cast iron skillet or casserole. Top evenly with crisp topping. Bake in oven for 45 minutes or until bubbly and golden brown on top. Serve with whipped cream with a basil leaf on top. Then… feast like a rabid animal and share with no one.
